Oven Fried Snapper











I got this recipe from one that was posted at Mimi's Cyber-Kitchen.


Oven Fried Snapper


2 lb. red shapper (or perch) fillets
1/2 c. oil
3 cloves garlic, pressed
1 tsp. salt
1 c. Parmesan cheese
1 c. dry bread crumbs


Rinse fish with cold water, pat dry with paper towels. Cut fish into six serving size portions.


Combine oil, salt and garlic in oblong baking dish. Place fish in mixture and let marinate 10 minutes. Turn and let marinate another 10 minutes.


Remove fish from marinade. Roll in cheese, then in crumbs; place on well-greased cookie sheet.


Bake at 500° F for 12-15 minutes or until fish flakes easily when tested with fork.
