*I make this about once a month and serve it with homemade macaroni and cheese and creamed peas. (See recipes below) It's nice, because you can make the patties ahead of time and just fry them up when you're ready to eat!
SALMON PATTIES
1 can pink salmon 1 egg 1 1/2 cup crushed saltine crackers 1 tsp lemon pepper 1/2 cup finely diced onion 1 tsp dried dillweed Juice of one lemon Veg oil for frying
Combine all ingredients except vegetable oil. Mix well and form into about 5-6 patties. If mixture is too moist to form patties, add a few more crushed crackers. If it is too dry and patties are crumbly, add a little milk. Brown patties in hot oil, about 5-8 minutes per side. Serve hot.
