We used to take this dish when we would tailgate at the University of Utah Football games.
CHEESY-VEGGIE EGGS

1 1/2 c. frozen broccoli, cauliflower and carrot mixture 6 lg. eggs 2 Tbsp. milk 1/4 tsp. salt 1/4 tsp. basil leaves 1/8 tsp. pepper 1 Tbsp. butter or margarine 1/4 c. sliced green onions 2 oz. (1/2 c.) shredded mild cheddar cheese
Cook vegetables as directed on package; drain. Keep warm.
In medium bowl, combine eggs, milk, salt, basil and pepper; beat well.
In medium skillet, over medium-high heat, melt butter or margarine. Add onions; saute for 1-2 minutes or until tender. Reduce heat to low; add egg mixture. Cook until eggs are set but still moist, stirring occasionaly from outside edge to center of pan. Stir in warm vegetables; sprinkle with cheese. Cover; cook 2-3 minutes longer or until cheese is melted.
