I wasn't sure which category to put this under... it has chicken, shrimp and pasta in it. This is my son's absolute favorite meal.
CHICKEN AND SHRIMP A LA ITALIANO
posted by snflwr8351
2 chicken breasts 1 lb. shrimp 1 stick (1/2 c.) margarine 1/2 tsp. salt 1/4 tsp. red pepper flakes 1/4 tsp. black pepper 1 tsp. oregano 1 bay leaf, crumbled 3 cloves garlic, diced 1 lg. onion, diced 1 lg. bell pepper, diced 1 stalk celery, sliced 2 tsp. Worcestershire sauce 2 tsp. lemon juice 1-2 tomatoes, diced
Peel and clean shrimp, cut into bite-sized pieces. Cut chicken into bite-sized pieces.
Combine salt, red pepper flakes, black pepper, oregano and bay leaf. Sprinkle half of mixture over shrimp, and half over chicken.
In large frying pan, melt margarine. Add chicken and saute until it turns color; scoop out meat, leaving margarine. Add shrimp to same pan and saute until pink; scoop out shrimp.
Add garlic, onion, bell pepper and celery in remaining margarine. Saute until tender. Add Worcestershire sauce, lemon juice and tomatoes. Return meats to pan and simmer about 3 minutes or until heated through.
Serve over cooked spaghetti, fusilli, linguini or rice.
NOTE: I usually will add more margarine because I like more "juice" over my pasta.
