Salmon with a Pecan Butter Glaze


Serves 4


                       


·         4 salmon fillets


·         salt and pepper -- to taste


                       


PECAN BUTTER


2 tablespoons  pecans -- finely chopped


2 tablespoons  butter -- softened


1 tablespoon  fresh parsley -- chopped


1 teaspoon  lemon juice


 


Prepare Pecan Butter.


 


Preheat the broiler. Lightly grease a broiler safe baking dish.


 


Sprinkle both sides of fish with salt and pepper and place in prepared pan.


 


Broil fish 4 to 6 inches from heat 4 minutes. Turn fish and spread each fillet with about 1 tablespoon of the prepared Pecan Butter. Broil until fish flakes easily with fork, anywhere from 4 to 8 minutes.


 


PECAN BUTTER:


Heat oven to 350 degrees. Spread pecans on ungreased cookie sheet. Bake until golden brown, 4 or less minutes, stirring occasionally; cool (WATCH !!)  Mix with remaining ingredients.

LC SERVING SUGGESTIONS: Serve the salmon immediately on one cup of baby raw spinach. The heat from the salmon will wilt the spinach perfectly.


 


SERVING SUGGESTIONS: Add steamed red potatoes.
