Chicken Florentine


* This is an elegant and tasty dish that you'll be happy to serve special guests or for a weeknight family dinner. Being a spinach fanatic I love this recipe, but if you don't like spinach you can make it with chopped broccoli.

CHICKEN FLORENTINE

Serves 6-8

Two 10 ounce packages frozen spinach
Two 10 3/4 ounce cans cream of chicken soup
1 cup real mayonnaise NOT Miracle Whip
1 cup sour cream
1 cup grated sharp Chedddar cheese
1/4 cup sherry
1 Tablespoon fresh lemon juice
1 teaspoon curry powder
6 cooked chicken breast halves, shredded
1/2 cyo grated Parmesan
1/2 cup breadcrumbs
Salt and Pepper


Cook and drain the spinach; set aside. In a large bowl, mix together the soup, mayonnaise, sour cream, Cheddar, sherry, lemon juice, curry powder and salt and pepper to taste. Spread the chicken in a greased 13x9x2" baking dish. Cover the chicken with the spinach, then pour the soup mixture over the spinach. Combine the parmesan and breadcrumbs and sprinkle over the casserole. Bake at 350*F for 30 minutes.
