Ingredients: 3 pounds chicken pieces (nutritional info based on breasts with skin and bones) 1/4 cup yellow mustard 1 tablespoon oil 1 tablespoon vinegar 1 tablespoon water 1/2 teaspoon dried thyme Dash ground ginger 3 tablespoons sugar-free honey substitute
Directions: Preheat oven to 350 F degrees. Place chicken parts, skin-side-down, in a lightly greased baking pan.
Combine mustard, oil, vinegar, water, thyme, ginger, and honey substitute in a small bowl. Spoon mixture evenly over the chicken parts. Turn chicken pieces over, rubbing glaze over all surfaces evenly (leaving you with skin side up and both sides coated.)
Bake uncovered for about one hour, or until the largest pieces are thoroughly cooked through to the center. Makes six servings.
