If you're ever in our neck of the woods we'll have to go to Stepenson's Apple Farm for lunch! They serve this fabulous chicken dish, it's my favorite and I get it everytime we go there! It's great with their green rice casserole and hot apple fritters. This doesn't really use cream at all...in fact, their original recipe uses non fat dry milk...I use 2% milk when making this at home. It's yummy!
Stephenson's Old Apple Farm Chicken in Butter and Cream
2 cut up frying chickens 1 cup flour 1 tbsp. salt 1 tsp. paprika 1/2 tsp. pepper 1/2 tsp. accent (optional) 1/4 lb. butter 3 cups milk
Preheat oven to 425 degrees F. Dip chicken pieces in water. Mix flour and spices together. Coat chicken with flour mixture.
Put chicken, skin side up, into 2 baking pans (13 x 9 x 2). Dot with butter. Bake for 30 minutes, or until golden brown. Remove from oven.
Pour milk around chicken. Cover with aluminum foil and return to oven. Reduce heat to 350 and bake 45 more minutes.
NOTE: Recipe states this may be partially prepared ahead of time. The first baking may be done up to a day in advance, the second baking right before serving.
