*My boys love this recipe, I make it at least once a week. Even my picky Sam loves it (we call it "Pizza Burger"...a more kid friendly name than Veal Parmesan.) This dish comes together so quickly...and you can prepare it earlier and keep in the fridge until you are ready to pop it into the oven. I don't even defrost the veal patties before I brown them. I use the breaded veal patties from Sam's Club...but you can also use chicken culets or even fried eggplant.
6 breaded veal or chicken patties (no need to defrost) 2 cans spaghetti sauce (I use Hunt's...Garden Vegetable) 2 Tbsp dried Italian Seasoning Kosher salt and fresh cracked black pepper(to taste) Garlic powder (to taste...I use alot) 1/4 cup parmesan cheese 1 cup shredded mozzerella cheese Olive oil for browning Spaghetti (cooked)
Preheat oven to 350*F
In a large skillet, heat olive oil until hot but not smoking. Season veal patties with herbs, salt, pepper and garlic powder. Brown in hot oil until golden brown.
While patties are browning, pour half of one can of spaghetti sauce into the bottom of a 13x9x2" baking dish. When patties are browned, place them on top of sauce. Sprinkle parmesan cheese over patties, cover with remaining sauce. Cover with foil and bake for 30-40 minutes or until hot and bubbly and veal is cooked through. Remove foil, top with mozzerella cheese and return to oven for 5 to10 minutes, or until cheese is melted but not browned.
