We had DH's family Christmas (Mom's side) today. It was so much fun and the hit of the dinner was DH's cousin Debbie's potato casserole. It was so good that everyone had seconds, and thirds, and fourths! Very savory and easy. I can't wait to make it. Here's the recipe! Love, Coe

Potato Casserole
1 bag chunky cut frozen hashed brown potatoes (thawed) 1 can cream of chicken soup 1 pint sour cream 2 cups shredded cheddar cheese 2 cups of crushed corn flakes (measured AFTER they have been crushed) 1 stick butter or margerine divided and melted 1 TBSP minced dry onion salt and pepper to taste
Mix enough melted margerine into corn flakes to make them moist. Combine remaining butter and rest of ingredients in a greased 13x9x2" casserole dish*. Mix well. Top with corn flakes. Bake in a 350*F oven for 30 to 35 minutes, or until hot and bubbly and corn flakes are golden.
