CHAI TEA MIX


For a fresher, more lively taste, try using whole spices and ground them using an electric spice/coffee grinder or mortar and pestle.

1/2 cup powdered creamer
1 1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ground cloves
1/2 teaspoon ground ginger
1/4 teaspoon ground allspice
1/4 cup granulated sugar
15 teaspoons instant black tea (or pekoe)

1. Combine all ingredients together and store in a tightly sealed container.

Makes about 15 servings.

To Make a Cup of Chai Tea:

1 teaspoon to 1 tablespoon Chai Tea Creamer Mix
1 cup boiling water
1 1/2 teaspoons honey (optional)

1. Combine the Chai Tea Mix with the boiling water and honey, if using; allow to steep for 2 to 3 minutes.

Makes 1 serving.

Cook's Note: The Chai Tea mixture will dissolve much better when vigorously stirred into hot water.

MEXICAN HOT COCOA

State of the mind transportation to the sunny climes of Mexico with just one sip of this sweet and spicy hot cocoa drink.

3 to 4 tablespoons granulated sugar
3 tablespoons NESTLÉ® TOLL HOUSE® Baking Cocoa
1/4 teaspoon ground cinnamon
1/4 tsp. chili powder
2 1/3 cups milk
1/2 teaspoon vanilla extract

1. COMBINE sugar, cocoa and cinnamon in small, heavy-duty saucepan; gradually stir in milk. Warm over medium heat, stirring constantly, until hot (do not boil). Remove from heat; stir in vanilla extract. Beat with wire whisk until frothy.

Makes 3 servings.

AT HOME CAPPUCINO

2 cups fat free skim or 1% lowfat milk
1 tablespoon sugar
2 cups strong, freshly brewed coffee
Cinnamon or grated chocolate, optional

1. Place milk in 2-cup glass measuring cup. Microwave on 100 percent power (high) until hot, about 2 minutes 20 seconds. Place hot milk and sugar in a blender container. Cover with a vented lid and blend until frothy, about 1 minute. To serve, divide coffee among 4 cups. Top each with frothy milk. Sprinkle with cinnamon or grated chocolate.

Makes 4 servings.

Nutritional facts: 60 cal., 4 g pro., 9 g carb., 0 g fat, 5 mg chol., 60 mg sodium. Daily value 15% calcium. Fat free skim milk was used for the nutrition analysis of this recipe.

HOT COCOA MIX IN A JAR

Ah, is there nothing finer after a day in the snow than curling up on the sofa with a hot cup of cocoa?

6 cups NESTLÉ® CARNATION® Nonfat Dry Milk
1 1/2 cups granulated sugar
1 cup plus 2 tablespoons NESTLÉ® TOLL HOUSE® Baking Cocoa
1 1/2 cups minature marshmallows (optional)

1. COMBINE dry milk, sugar, cocoa and marshmallows in large bowl. Pour into 2-quart jar or tall container. Seal with lid and decorate with fabric and ribbon.

RECIPE TO ATTACH:
Measure 1/2 cup cocoa mix into mug. Stir in 1 cup boiling water. Makes 12 servings.

RUSSIAN TEA

Ingredients

1 cup instant tea (If preferred, 1) cup)
2 cups Tang
1 tsp. cinnamon
1 tsp. cloves
1 pkg. Wylers lemonade mix
1 1/2 cups sugar (or less)


Procedure

Mix all together and keep in tightly covered jar. Use approximately two heaping teaspoons for one cup of tea.
